When taking over the property in December of 2002, our first full-scale task was completely to redesign the layout of the vineyard. After an in-depth study and detailed identification of soil-types, one-half of the vineyard of Mas Belles Eaux was reorganised around the noble grape varieties of Languedoc, i.e. Syrah, Grenache, Mourvèdre or Carignan.
We have worked to achieve perfect pairing between each grape variety and terroir. Mourvèdre, for example, needs a lot of sunshine and optimal exposure to reach full maturity. As a result, it was planted in one specific part of the vineyard of Mas Belles Eaux, where these conditions exist. Grenache, a distinctly drought-resistant variety, matures more easily in poor soils, where its long roots can stretch deep-down into the ground to feed on the nutrients it needs.
